Goddess Salad



Goddess Salad
(another favorite from my awesome cousin Melanie)

Greens *
Chicken pieces (cooked of course!)
Avocados, sliced
Red Onion Slivers
Fresh Mushrooms, sliced
Seasoned Pita Chips, crushed a little
Goddess Dressing (I like Trader Joes)



*I try to always use spinach for its nutritional content but use what YOU prefer:)

Vermont Maple Blueberry Salad

This salad is so delicious at Cafe Zupas. Could I recreate it? I think I can.
1 head Romaine Lettuce, cleaned and chopped
Fresh Blueberries
1-2 Granny Smith Apples
Crumbled Blue Cheese
Cinnamon sugared Almonds (below)
Maple Vinaigrette (below)

Toss and serve. Yum!

Maple Vinaigrette
(all amounts are approximate. I just poured what I thought might work)
3T White Wine Vinegar
1/4 c sugar, dissolved in the vinegar
1/2 c vegetable oil
1/4 c maple syrup
1/2 tsp dry mustard
dash onion powder


Cinnamon Sugared Almonds
1 c raw almonds (I actually like to chop them a bit before sugaring them, make them bite size)
1/2 c sugar
1/2 tsp cinnamon
1/8 c water

Combine sugar with cinnamon then add water. Boil in a saucepan and add almonds, stirring often if not constantly. Cook until moisture has evaporated. Spread on cookie sheet to cool.

Strawberry Spinach Salad

Light and Refreshing! This recipe came from PC Casual Cooking. It is so yummy! I'll give it a 4.

Dressing:

juice from 1 lemon (also add 1/2 tsp zest)

2 Tbsp white wine vinegar

1/3 c sugar

1 Tbsp vegetable oil

1 tsp. poppy seeds

Salad:

1/4 c toasted almonds

8 oz. strawberries

1/2 cucumber, sliced and cut in half

1/4 small red onion, sliced thin

6 oz. baby spinach

I didn't have any lemon or poppyseeds the first time I made it and it still tasted fine!

Other things I've added that have been tasty: Craisins, candied walnuts

The dressing can be assembled ahead of time but I wouldn't suggest combining the salad and dressing until just before serving. The vinegar seems to make the lettuce wilt.

Spring Green Fruit Salad with White Chocolate Dressing

I found this salad recipe that has white chocolate vinaigrette dressing. For our next Enrichment Night we are having an all-chocolate dinner and we needed a semi-healthy course that included chocolate. My husband doesn't care for fruit salad and the fact that he actually loved this recipe makes me rate it a 5!!!


Salad:
1 (15 ounce) can Mandarin oranges (reserve juice for dressing below)
5 ounces pre-washed spring greens
2 cups fresh strawberries, quartered
1/2 pint blueberries (optional)


Dressing:
1/4 cup Champagne wine vinegar (I just used wine vinegar)
1/3 cup reserved Mandarin orange juice
1/4 teaspoon salt
2 tablespoons sugar
1/4 cup white chocolate chips (I used more than 1/4 cup for a sweeter taste)
3 tablespoons olive oil


Directions:
In a small saucepan over medium-low heat, combine vinegar, reserved orange juice, salt and sugar. Gently heat until sugar is dissolved. Remove from heat and stir in white chocolate until melted. Set aside to cool. Do not refrigerate as chocolate will set. Before serving, slowly whisk in oilve oil. Serve dressing tossed in salad or on the side.
